This Hibiscus Mocktail is a delightful and vibrant drink that combines the flavors of sweet strawberries, aromatic thyme, and tangy hibiscus. It’s the perfect non-alcoholic beverage to enjoy on a sunny day or as a refreshing treat at any time. This will be on repeat for me on the hot summer days ahead!

Why a {hibiscus} mocktail?

Mocktails are having a rising appeal lately with many people quitting alcohol, while also wanting to enjoy a fun drink!

This drink is an excellent mocktail because I don’t only take out the alcohol but add in health benefits. A total win in my opinion.

I love a good mocktail, but I don’t just want sparkling water and juice. (The usual mocktail concoction). I want a bit of complexity, good flavor, and some acidity!

I love using tea in my mocktail recipes because it adds a beautiful depth of flavor that is so often missing in mocktails.

What is in this hibiscus mocktail?

Strawberries– Fresh or frozen work here! If using frozen, just wait for it to thaw for about 10 minutes so it’s easier to muddle.

Honey simple syrup- Once you make honey simple syrup you won’t go back to refined simple syrup with cane sugar! It’s so easy and adds a beautifully subtle floral taste to this mocktail. It’s simply equal parts hot water and honey.

Lemon juice- Fresh squeezed is best. Always. Every mocktail needs some sort of acid to add a slight punch without alcohol. Lemon also compliments the flavors wonderfully and actually makes them stand out more!

Apple Cider Vinegar– This is optional but enhances the depth of flavor in this mocktail even more. I love incorporating ACV into drinks when I can because of the wonderful health benefits; helping lower blood sugar and aiding in digestion.

Hibiscus tea– The base of this wonderfully refreshing mocktail. The flavor of hibiscus tea is often described as tart, tangy, and pleasantly sour. Hibiscus tea has a tart and tangy flavor with hints of cranberry and citrus, offering a refreshing and vibrant taste experience. I bought mine from Thrive Market. Or you can buy some here from Amazon.

What are the benefits of hibiscus tea?

  1. Antioxidant-rich: Packed with antioxidants to protect against free radicals and reduce oxidative stress.
  2. Blood pressure management: May help lower blood pressure levels.
  3. Heart health support: May contribute to lower blood pressure and cholesterol levels, reducing the risk of heart disease.
  4. Weight management: Can aid in weight loss by inhibiting carbohydrate absorption.
  5. Digestive health: Offers mild diuretic and laxative properties, supporting digestion and relieving stomachaches.
  6. Immune system support: Rich in vitamin C, it strengthens the immune system.
  7. Hydration and refreshment: Caffeine-free, flavorful alternative for hydration.

  • 2 tablespoons honey
  • 4 strawberries Fresh or frozen. If frozen, allow to thaw first!
  • 1 1/2 tablespoons fresh squeezed lemon juice
  • 2 sprigs fresh thyme plus 1 extra for garnish
  • 1 Teaspoon apple cider vinegar optional, but recommend for depth of flavor and health benefits!

Instructions

  • First, steep your tea bags in 2 cups for water for 5 minutes. Remove the tea bags when it's done steeping and allow to cool.
  • Make a honey simple syrup by combining 2 tablespoons of honey with 2 tablespoons hot water and mixing until well combined. Add two sprigs of thyme to the honey simple syrup and allow to sit for a few minutes while you wait for the tea to cool and to allow the thyme flavor to be incoorpated into the syrup. Discard the thyme sprigs before using.
  • Muddle the strawberries in the bottom of a cocktail shaker along with the honey thyme simple syrup. Add lemon juice, apple cider vinegar (optional), and cooled hibiscus tea to the cocktail shaker. Add ice and shake until the shaker is frosty! (A good 30 seconds at least.)
  • Pour the contents along with the ice into a cocktail class. Garnish with a sprig of thyme and enjoy!! (Hopefully outside on a sunny day.)

Notes

*If you don’t drink all of this in one day, you can put it into a mason jar or container with a lid in the fridge for up to 5 days.
