Chocolate Cottage Cheese Ice Cream- High Protein

Chocolate cottage cheese ice cream. Yup.

Cottage cheese is definitely having its moment on the internet right now. And I am so here for it!! It is a very high source of protein and good-quality fat to keep you full and satisfied, making it a great snack or ICE CREAM. Yes, ice cream. When I first saw the videos of cottage cheese being blended together and frozen into ice cream I was skeptical.

But then I tried it and now I’m 100 percent team cottage cheese. If you like fro-yo you will love this higher protein option. I think it tastes more similar to froyo than ice cream, which is still fantastic!

What is {chocolate} cottage cheese ice cream?

It may sound strange, but cottage cheese ice cream is simply blended cottage cheese and honey. After you have that base, you can add in whatever you like! I did cocoa powder for a chocolate version, peanut butter, and a chopped chocolate bar. It tastes like a delicious chocolate peanut butter cup in ice cream form. Next, freeze the cottage cheese mixture for a few hours until it becomes ice cream consistency.

Tips for perfect chocolate cottage cheese ice cream

Use full-fat cottage cheese. This is crucial for a good creamy texture that won’t be icy. if you use lower-fat cottage cheese. (Also, don’t be scared of high-quality full-fat foods!) My favorite brand is Good Culture Organic Full Fat. The taste is superior in my opinion, and I always try to keep my dairy organic if I can find it.

Freeze for 3-4 hours and no more, if possible. If you wait any longer it will be pretty icy and not smooth and creamy. Still good, but if you want the perfect texture and to not have to thaw it out for a long time, enjoy it from the freezer after 3-4 hours.

Chocolate Cottage Cheese Ice Cream- High Protein

Ingredients
  

  • 1 cup full fat cottage cheese
  • 3 tablespoons honey
  • 2 tablespoons cocao powder
  • 1 bar chopped dark chocoalte
  • 1 tablespoon peanut butter optional, for drizzling, but recommend!

Instructions
 

  • In a food processor or high-speed blender, combine the cottage cheese, honey and cocao powder. Blend until smooth and creamy. (you may need to scoop down the sides in between blending).
  • Add in some of the chopped chocolate and mix to combine. Place in a freezer safe container (I used glass pyrex) Add a drizzle of penut butter on top and the rest of the chopped chocolate . Put a lid on the container and place in the freezer for 3-4 hours, until it has an ice cream consitency. (slightly frozen, but still scoopable) Any longer and it will become pretty icy.
  • Allow the ice cream to thaw from the freezer for 5-10 minutes. Scoop and top with more chopped chocolate and peanut butter if you like! ENJOY!

Notes

This is best when served immediately after the 3-4 hours. You can leave it in the freezer for up to a week, but you will need to let it thaw on the counter for a good 30 minutes before enjoying.

    • Hi! I’m sure you could swap the cocoa powder for the protein powder. I would taste it after blending and see if the flavor is where you want it with the protein po

    • Hi! I have not tried it with lactose free cottage cheese, so I am not sure. I would assume it would work! The texture and taste may just vary slightly. But I would think it should produce a similar result. Please let me know how it goes if you try it!! 🙂
