Mix together coconut oil, coconut sugar, vanilla and egg together in a bowl.
Add the almond flour, baking soda, cinnamon, cardamom to the mixed ingredients until well combined.
Add the oats and raisins and combine them together.
Using an ice cream scoop, scoop out the some dough and roll it into balls. Place on a parchment lined baking sheet and bake at 350 degrees for 15-17 minutes until golden brown. Allow them to cool for 10 minutes and ENJOY!
This recipe makes 24 small cookies or 12 big cookies. They spread quite a bit while baking, so leave enough room between the cookies on the baking sheet for them to spread.*Note: If paleo, baking powder is technically not allowed because it contains cornstarch.
