Healthy Gluten-Free & Dairy-Free Oatmeal Raisin Cookies

A healthier version of your grandmothers classic oatmeal raisin cookie recipe
Servings 24 small cookies

Ingredients
  

  • 1/4 cup melted coconut oil
  • 1 cup coconut sugar
  • 1/2 tsp. vanilla
  • 1 egg
  • 3/4 cup almond flour
  • 1 1/2 cup rolled oats
  • 1 tsp baking powder see note for paleo baking powder
  • 1/2 tsp cinnamon
  • 1/8 tsp. cardamom optional, but adds great flavor!
  • 1 pinch sea salt
  • 3/4 cup raisins

Instructions
 

  • Mix together coconut oil, coconut sugar, vanilla and egg together in a bowl.
  • Add the almond flour, baking soda, cinnamon, cardamom to the mixed ingredients until well combined.
  • Add the oats and raisins and combine them together.
  • Using an ice cream scoop, scoop out the some dough and roll it into balls. Place on a parchment lined baking sheet and bake at 350 degrees for 15-17 minutes until golden brown. Allow them to cool for 10 minutes and ENJOY!

Notes

This recipe makes 24 small cookies or 12 big cookies. They spread quite a bit while baking, so leave enough room between the cookies on the baking sheet for them to spread.
*Note: If paleo, baking powder is technically not allowed because it contains cornstarch. I don't mind because it is a negligible amount. If strictly paleo you can make an easy 3 ingredient paleo baking powder using this recipe from wickedspatula.com
